I'm heading to Brussels and Amsterdam in less than two weeks, and I could use some suggestions. My travel-mates and I already have a wiki that's bursting with pubs, breweries, restaurants, bars, museums, and so forth. What we don't have is a lot of first-hand advice about what to see.
We have four days in Brussels and five in Amsterdam. The former is already somewhat scheduled, what with certain breweries we want to tour only being open certain days of the week. Our time in Amsterdam is wholly unscheduled, and that's where I could use more help.
I hope to blog a fair bit of the vacation, both beer-related and otherwise. Cheers!

You could visit Antwerpen, Gent and Brugge when you're staying in Brussels. Antwerpen and Gent are about half an hour by train or car and Brugge another half an hour from Gent.
In the historical center of Gent, visit "Waterhuis aan de bierkant" (Waterhouse on the beerfront). They serve about 150 kinds of beers.
Not far from there, you have Amadeus, a very good spare rib (14 euros all you can eat) restaurant. Don't order the wine though.. Too expensive for what it is, but they do have some good beers
As a belgian I would recommend the following beers: Jupiler, De Koninck, Hoegaarden and Leffe. And Duvel perhaps too.
You should certainly visit Antwerp (I live there). It has way more to offer than Brussels!

I would prefer Amsterdam. I had been there many times and always book my trips through Expedia.
